1865

Amatrice village

The Salvis' are from Amatrice village which has ruins dating back to the Roman times. In 1865 Antonio opened a wine shop where locals came to drink and taste cured ham and cheeses. During WWI many residents of Amatrice were forced to give up their lands and move. Salvis migrated to the capital Rome bringing along their local flavors and skills.

We believe strongly in the knowledge that our grandparents have passed on to us, understanding the flavors and pairings of true Italian foods. Foundation of our culinary heritage is rooted in many plates beyond the simple classics.

OUR OSTERIAS IN ROME

The torch has been passed on to the new generation and Salvis have opened Osterias across Rome. Our Osterias have been well-known destinations for the food lovers and celebrities alike.

Our proud selection include:
Il Cortile (“The Courtyard”), La Piccola Capri (Little Capri), Perilli, Osteria delle Corse(the Racing Osteria), La Taverna Cestia ( the Cestia Tavern), and the Osteria Berruti and Fortunato al Pantheon ( “Fortunato at the Pantheon”) on the splendid Pantheon site.

2016

"L'AMERICA"

We wanted to bring Italy to Charlotte so we tapped in to our vast heritage and tradition to re-create a true Italian Osteria that you would find in Rome.

We are steeped in tradition and that is why we opted to import original furniture from Italy, unique pieces of our history that would be only available in our grandmothers' homes, pieces that tell our story and represent the most of our places.

The artisan ceramics used in our restaurant come directly from Lucca in Tuscany, considered the heart of clay where the art of pottery has been passed down from one generation to another, from the masters of the 14th Century to today. Turned by hand, the ceramics give each object full and dense colors and a unique look.

Salvis' third generation has landed to America and, in the best of traditions, is following the family
steps by taking over Restaurant Dolce in the attempt to recreate atmospheres, smells and tastes of their beloved Rome.
In the…. Neighborhood, in the lovely city of Charlotte, Osteria Dolce stands out for its elegant, welcoming and yet casual atmosphere.
